Wine serving temperature and Yali Range

We've been asked many wine related questions over the last few weeks. This week, we want tackle an excellent topic: the right temperature to serve wine. Temperature is a matter of endless discussion, but it's safe to say that most Chinese serve their red wine too warm, and often their white wine too cold.

Take for example, the Yali Reserve Syrah which requires a bit of warmth to express its terrific gamey, peppery aromas. The ideal temperature should be somewhere around 18 degrees celcius, just shy of room temperature. The Yali Chardonnay needs to be chilled to around 11-12 degrees.

While every wine will have its own optimal serving temperature we can
still establish a few approximate rules of thumb. Note that the typical refrigerator temperature, in the 0 - 4 degC range, is too cold for most white wine. If you chill your wine in the fridge, take it out a little while beforehand:

* Tart, bright white wines: 8-10 degC
* Sparkling wine: 10-12 degC
* Rich white wines, like an aged chardonnay: 14-15 degC
* Light red wines (Chianti, Beaujolais, young pinot noir): 15-17 degrees
* Heavy red wines: 18-20 degrees

The perfect temperature for any given wine will depend on how much fruit, tannin and alcohol it contains. Due to the many variations in style and varieties, temperature remains a topic of great debate amongst wine enthusiasts.

Great concentration of fruit, supple and soft tannins with layers of black pepper and black cherry interweaved with smoky oak. A wine of class and wonderful character. A steal at this price!! Be quick, limited availability.
